When I worked as a chef I had a happy brigade. I didn't run it with a rod of iron because I didn't need to me. I honestly believe that relaxed happy staff will be reflected in the food.

While I'm here, I'm gonna milk it for all I can, so when I'm no longer hot - and I know that day is coming - I will step over here and enjoy everything I've created up to this point. The music is just opening all these doors, so I can relax.

Ed Koch will never 'rest in peace.' That was not his way. He was always nervously squirming, while making others squirm as well. Comfort was not his goal. What I enjoy doing more than anything is, I have my little antique car collection, and when the weather is pretty I like to get out one of my old cars. I have a little route I run down in the country, down Nachez Trace Parkway. The loop down through there is just really relaxing, not much traffic.

My main objective with every album is to capture a moment in time, which usually makes the whole process very relaxing. I only discover in retrospect when looking back at the songs how my life is going!
